Snickerdoodle Recipe

One of the first things I do when I visit Grandma, is pester her for any baked goods or preserves she might have whipped up before my arrival. 

My most favourite treat she makes is the Snickerdoodle biscuit. Thin, crisp, yet chewy, with the distinct warm spice of cinnamon to warm your mouth & heart. 

You will need:

250 Grams unsalted butter (softened)

1 1/2 cup white sugar

1 tsp vanilla

2 eggs

2 3/4 cup plain flour

2 tsp baking powder

1/2 tsp salt                    

+ 1/2 cup white sugar & 1 tbs ground cinnamon to coat

 

Method:

 

Cream butter & sugar until smooth. Add in eggs one at a time and mix until well combined. Then add flour, vanilla, baking powder & salt until you have a smooth & firm dough. Refrigerate dough for 20 minutes. Preheat oven to 190 degrees Celsius. Line two large baking trays with baking paper. Combine the remaining sugar & cinnamon in a small bowl. Roll dough into 2 cm balls using your hands. Coat in sugar & cinnamon mix and place on tray 5 cm apart. Press balls flatter with fork. Bake for 10-12 minutes and cool on tray. Try not to eat all of them in one go.
